Hearty and Light all in one bite

A hearty soup doesn’t have to have cream, thickeners or even a ton of ingredients. This soup is one of those 30min weeknight meals that tastes like you spent all day layering the flavors.

As I navigate working from home and supporting virtual learning with my nephew, i’m finding less and less motivation to stand over the stove. Not that my love of food or the kitchen is fading, but that I just haven’t had the brain capacity to get creative, or to even care. The pandemic has affected people in so many different ways, and for me, it has stifled my creativity. But I seem to be coming out of my fog, and have been oddly inspired by soup!

I think its the combination of crappy weather and my hatred of canned soup that has sparked my recent desire to create some solid and QUICK soup recipes. So here we are with this seven show stopper. I hope you enjoy!

Ingredients

1 1/2 lb turkey italian sausage (hot or sweet)remove casing if necessary

64oz Chicken stock

2 stalks celery quartered and chopped

1 small onion diced

6c kale thinly chopped

1tbs italian Herb Seasoning

1/4tsp red pepper flakes
